Before you get started / Kelley’s tips
- Prep Before You Start: This recipe moves fast, so have all your ingredients chopped, measured, and ready to toss in. It’ll make the cooking process a breeze.
- Don’t Overcook the Zucchini: Keep an eye on your veggies. You want them tender but still slightly crisp for the best texture.
- Add some sriracha or chili oil for a kick!

Ingredients
- Zucchini: Tender and slightly sweet, it soaks up all the savory flavors of the sauce.
- Onion: Adds a subtle sweetness and depth of flavor.
- Garlic & Ginger: Give this stir fry so much flavor! I never do a stir fry without loads of fresh garlic and ginger!
- Sesame Oil: Adds a hint of nuttiness to the sauce.
- Honey: Balances out the savory and tangy elements.
- Soy Sauce: Adds the perfect umami punch. I like to use low sodium soy sauce to be able to control the saltiness.
- Rice Wine Vinegar: Gives the sauce some acidity and a hint of sweetness. Rice wine vinegar can be found in the international / asian section in the grocery store.
- Hoisin Sauce: Sweet, salty, and rich, it gives the sauce its signature depth and glossy texture.
How to make Zucchini Stir Fry
- Saute Zucchini and Onion: Heat olive oil in a large skillet over medium high heat. Add in zucchini and onion and sauté for 3-4 minutes or until the zucchini gets some color on it and it starts to get tender.
- Add Garlic and Ginger: Add in the garlic and ginger and cook for 1-2 minutes.
- Make the Sauce: Add in the sesame oil, honey, soy sauce, vinegar and hoisin sauce. Toss to coat the zucchini in the sauce. Serve immediately with sesame seeds for garnish, if desired!
