    The Best Pulled Pork Breakfast Tostadas Recipe

    My pulled pork breakfast tostadas recipe is absolutely perfect for a satisfying and filling breakfast! You definitely won’t be hungry after this breakfast. Featuring crispy tostadas, savory refried beans, saucy pulled pork and eggs, you have everything you need for a protein-packed and delicious breakfast.

    I like to top mine off with pico de gallo for a bit of freshness. For some spice, use your favorite hot sauce! This is the perfect opportunity to use up any leftover pulled pork, or make a crockpot full of pulled pork at the beginning of the week and use it to make these breakfast tostadas, sandwiches and more!

    Ingredients Needed

    • Olive Oil: Use olive oil to crisp up the tortillas and cook the eggs!
    • Tortillas or Tostadas: You can use tortillas or tostadas. If you use tortillas, you can toast them up yourself in a pan! If you use tostadas, no need to crisp them up since they are already crispy.
    • Eggs: I cooked my eggs over easy here. You can make them however you’d like though!
    • Refried Beans: It is easiest to use canned refried beans. Heat them up before spreading them onto the tostadas.
    • Pulled Pork: I recommend making homemade pulled pork! You will have some leftover, but it is great to have on hand to make these breakfast tostadas, sandwiches or nachos. Nowadays, you can also buy pre-made pulled pork in the refrigerated section at the store.
    • Pico de Gallo: Feel free to use store bought or make your own pico de Gallo!
    • Hot Sauce: Top it all off with your favorite hot sauce for some added spice!

    How to make pulled pork breakfast tostadas

    1. Toast the Tortillas: If you bought tostadas, you can skip this step. If you have tortillas, heat 1 tbsp of olive oil in a large skillet over high heat. Add in corn tortillas and cook for 2 minutes on each side or until they start to get golden brown and crispy. Set aside on a paper towel lined plate.
    2. Fry the Eggs: Heat olive oil in a large skillet over high heat. Add in eggs and pan fry them for 2-3 minutes or to your desired doneness.

    1. Add Beans: Spread about 1/4 cup of refried beans on top of each tostada.

    1. Assemble: Then top each with 1/4 cup of pulled pork and 1/4 cup of pico de Gallo and eggs. Serve with hot sauce if desired and enjoy!

    Tips for Success

    • Don’t have refried beans on hand? Substitute them with regular black or pinto beans instead! Just rinse them first and warm them up. Whole beans would be delicious here!
    • If you don’t want to make pico de Gallo, you can just dice up some tomatoes and onions and top off your pulled pork breakfast tostadas with that instead.
    • Pulled pork can be replaced with shredded chicken or beef barbacoa! If you are in a rush, you could even shred up some rotisserie chicken. Or, skip the meat all together to make vegetarian breakfast tostadas!

    If you have leftovers, I recommend storing each component separately and assembling the tostadas after reheating each component. Otherwise, the tostadas will get soggy! You can store the pulled pork and refried beans separately in the fridge for up to 3-4 days.
